Is the hidden text really removed?
Yes. On save, each page is flattened into an image with the black boxes burned in, so the covered text can no longer be selected, copied or recovered.
Why can I no longer select text after redacting?
Because flattening turns the pages into images. That is exactly what makes the redaction safe — there is no hidden text layer left underneath.
